Basically, they ripen from certain amino acids being converted to a gas known as ethylene gas. The gas produces certain enzymes that cause the banana to change color and texture. A brown paper bag helps fruit like bananas ripen quicker because they help concentrate the ethylene gas. This gas, as you know, produce enzymes that cause the fruit to ripen. If the gas is more concentrated, ripening occurs quicker.
