The reason why the liquid in the thermometer drops is because the water's temperature is low. When the temperature of the water is high or hot, the liquid molecules moves faster making them spread farther apart. But when the temperature of the water is low, the kinetic energy of the water molecules decreases allowing them to get closer to each other.
